Smaller eggs laid by younger hens will be sold for the first time in supermarkets as companies step up their efforts to reduce food waste.
Waitrose announced yesterday that it would sell the eggs in packs of four at £1.99.
Young hens – known as pullets – often lay smaller eggs at the start of the season which are deemed too small due to supermarket regulations. Up to 10 per cent of egg farmers’ stock is therefore thrown away.
But they taste exactly the same and can be used normally in cooking.
Ivan Tisdall-Downes, head chef at Native Restaurant in London, told the Daily Telegraph it was ‘madness’ to throw the smaller eggs away.
He said: ‘They are almost perfectly round so not your usual egg shape and quite amazing to look at.
‘They are too small to conform to the rules and regulations of the supermarket industry but we use them all the time. It’s a completely pointless amount of waste, you don’t have to change your cooking at all to use them, you just use more.’
Zoe Simons, Development Chef at Waitrose & Partners, added: ‘Pullet eggs are a chef’s dream especially when it comes to pastry. Thanks to their smaller nature they hold their shape a lot better which makes them idea for poaching.
‘The yolks have a wonderful deep colour and rich flavour, making them perfect for mayonnaise or pastry such as a lemon tart or creme brûlée.’
