An Australian home cook has shared how she made tasty chicken pesto penne with cheese and spinach as a perfect winter dinner for the whole family.

The woman shared photos of her delicious dish to the Slow Cooker Recipe and Tips Facebook page after cooking it for four hours. 

To make the meal she used garlic, cooked cream, basil pesto, shallots, cream of chicken soup and sundried tomatoes.  


An Australian home cook has shared how she made tasty chicken pesto penne with cheese and spinach as a perfect winter dinner for the whole family 

She started by lightly cooking all the ingredients in stovetop pots and pans for two hours, then transferred them to the slow cooker for an additional two hours to allow the flavour to develop.

In response to the Facebook post, other home cooks raved about the results and said they couldn’t wait to try it out for themselves.

‘Yum! This is dinner tomorrow night,’ one woman said.

‘I’m making this… this looks incredible,’ another added.

While many were impressed, others questioned the method of using the slow cooker, as preparing the meal in the pots seemed optimum.

‘So basically it is cooked in pots and pans and then kept warm in the slow cooker,’ one home cook said.

‘I love this page, but recipes like this and same with the lasagne just confuse me,’ another commented.

Despite the conflicting opinions, many said they will still make the penne dish for their families. 

How to make chicken pesto penne in a slow cooker 

Ingredients

350g penne pasta

500g chicken fillet thighs diced

5 large shallots sliced

4 slices short cut bacon finely diced

1 tsp minced garlic

300ml cooking cream

1 tin cream of chicken soup

190g jar basil pesto

1/2 cup sundried tomatoes sliced, reserve oil

1 cup baby spinach leaves

1 cup grated cheese

1/2 cup grated parmesan cheese

Method: 

Brown chicken, garlic, bacon and shallots in reserved oil, in a pan if your slow cooker doesn’t have a sear function

Add all ingredients except pasta, spinach and cheeses and combine well

Cook on low for 2 hours

Mean while boil pasta until just beginning to soften, drain and let cool.

Add pasta to slow cooker and stir through

Place tea towel under the lid

Cook on low for approximately 2 hours or until pasta has expanded and sauce has thickened.

Stir in baby spinach leaves

Layer with cheese

Cook on low until cheese has melted
