Lockdown has given people the opportunity to hone their baking craft.
Over the past three months, we’ve seen bakers recreate some of their favourite shop-bought treats at home – from Warburton crumpets to a McDonald’s apple pie.
Now, a company has revealed how to make an enormous cookie at home – popularised by dessert chain Millie’s Cookies.
Pop-up event businessThe Big Bakes has shared a supersize recipe for fans to try.
A handy tutorial on the The Big Bakes’ Instagram account takes home bakers through the ingredients and the method.
Anyone looking to give the recipe a go at home will need two eggs, 1 tsp salt, 1tsp vanilla, 390g plain flour, 1 tsp baking soda, 235g unsalted butter, 340g, chocolate chips, 110g granulated sugar, 255g light brown sugar, 100g butter, 150g icing sugar and 25g cocoa powder.
They will also need a stand mixer (or hand mixer, or a whisk), a mixing bowl, a spatula, teaspoon measure, cling film, scales and a large baking tray with parchment.
For the method, bakers should start by combining sugar and butter and whisk until pale and fluffy. Then add the eggs one at a time until incorporated.
After, add a teaspoon of vanilla and mix until combined. Then add the flour, baking powder and salt and then mix slowly until all the ingredients come together.
Once combined, add the chocolate chips and mix until the dough has formed. Then wrap the cookie dough in cling film and leave to chill for two hours in the fridge.
After the dough has cooled, weigh out 400g of cookie dough and roll into a ball, before popping in the centre of a baking tray and pressing down into a large puck shape.
Bake at 160c for 30-35 minutes until golden brown on the edges, then leave to cool before decorating.
While the cookie is cooling, make the buttercream by beating the icing sugar, butter and cocoa together until smooth.
Put the buttercream in the piping bag and, once the cookie is cool, decorate the top.
