Gordon Ramsay has shared his simple yet tasty turkey curry to make the most of what’s left of turkeys across the country. Gordon’s recipe is easy as it only takes 20 minutes – or less – to plate up.
Ingredients – to serve four
For the curry paste:
One lemongrass stalk, trimmed
25g ginger, peeled and roughly chopped
One red chilli, roughly chopped
Three garlic cloves, peeled
One shallot, peeled and roughly chopped
Two tbsp garam masala
For the curry:
One onion, peeled and sliced
400ml coconut milk
One tbsp soy sauce
150g mixed green vegetables, such as mangetout, green beans, broccoli tips, spinach
400g leftover cooked turkey, shredded or cut into bite-sized pieces
One bunch coriander, chopped, reserving a few sprigs to garnish
Two limes, juiced, plus extra wedges to serve
One red chilli, finely sliced
First, to make the curry paste, bash the lemongrass with the back of a large flat knife to crush slightly, then roughly chop.
Add to a food processor along with the remaining ingredients and two tablespoons of the oil. Blend together to make a paste.
Next, add the remaining two tablespoons of oil to a deep frying or sauté pan and when hot, add the paste.
Fry over a high heat for two to three minutes then add the sliced onion and continue to cook for five minutes or until softened.
Add the coconut milk, soy sauce and vegetables and stir together to create a sauce.
Stir in the leftover turkey and simmer for 10 minutes.
To serve, stir through the chopped coriander and lime juice, divide between serving bowls and garnish with the reserved coriander sprigs, lime wedges and sliced red chilli. Delicious with steamed rice, naan breads or noodles.
Gordon added: “This curry recipe would work equally well with leftover chicken from a Sunday roast or you could add in prawns for a fish curry, cubes of paneer for a vegetarian option or extra vegetables for a vegan curry.”
Turkey curry isn’t the only thing that can be made on Boxing Day with any leftover turkey from Christmas Day.
Gordon also likes to make Turkey Santa Fe Lettuce Wraps, which he says “are so good, you’ll want to save some leftover turkey just to make them”.
The chef noted how challenging it can be to stay on track and eat healthily over the festive period, so he “wanted to create a leftover recipe for turkey that’s not just delicious, but also light after a day of indulging on roast potatoes, gravy, and Christmas pudding”.
