Baker show how to make 'lemonies' for the perfect summer sweet treat

By now, we all know and love the delicious treat-focused recipes from Eloise Head, founder of FitWaffle.

The Instagram account that was born out of boredom in lockdown 1.0 has been one of the few good things that came out of those awful months.

In her latest post, Eloise has shared a recipe for ‘lemonies’ – aka lemon blondies.

Once the warmer weather hits, desserts start to get a citrus twist that’s light and refreshing, so we’re welcoming this bake.

Her post reads: ‘These are basically a cross between a fudgy blondie and a lemon drizzle cake!

‘They’re super fresh and tangy and packed with lemon flavour! Plus they’re super easy to make and perfect for a sunny day.’

We’ll be making these for our next picnic meet.

Here’s what you need to make them yourself.

Ingredients

Base:

  • 215g unsalted butter, softened
  • 180g granulated sugar
  • 1 large egg + 1 yolk
  • 60ml fresh lemon juice (about 1.5 lemons)
  • 300g plain flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • Zest from 1 lemon

Glaze:

  • 250g icing sugar
  • 5-6 tbsp lemon juice
