Mum reveals how she gets eight hidden vegetables into sausage rolls

Sometimes the only way to get fussy kids to eat vegetables is to hide them.

And one mum has revealed how she managed to get eight different types into one meal with her sausage roll recipe.

While a sausage roll is a bit of a treat, she likes to make them a little healthier by making them herself.

She manages to sneak onion, cauliflower, broccoli, carrot, spinach, sweet potato, courgette and pumpkin into the mix – and her kids have no idea.

Her recipe makes 30 snack-sized sausage rolls but you can make up a batch and freeze some to reheat at another time.

To create the snack, she blends the vegetables together to create a paste and then adds sausage meat, an egg and breadcrumbs to make the filling.

Once it’s shaped, it can then be covered in puff pastry and baked.

Posting on Facebook, she said ‘Can never go wrong with homemade sausage rolls with hidden veggies.’

Others agreed the sausage rolls looked great and were a great way to sneak some veg into kids’ diets.

One person said: ‘This looks delicious. Thanks for sharing. Love the idea of sweet potato in there.’

‘Yum, I would call them pastie rolls,’ another added.

Ingredients

1kg sausages mince

500g defrosted bag cauliflower, broccoli and carrot

2 onions

Spinach

1 small Sweet potato (cooked)

1 small courgette

A cup of pumpkin (cooked)

1 egg

Breadcrumbs from two slices of bread

8 sheets of puff pastry

Seasoning to taste 

Method

Mix all of the vegetable together in a blender until smooth.

Add the vegetable mixture to the meat and then add the breadcrumbs and egg.

Spoon the mixture in lines on the pastry and roll it over.

Cook in an oven until golden brown.

Makes 30.
