Mary Berry’s indulgent Chocolate Maltesers Cake is ‘a real crowd-pleaser’

Christmas traditions are observed differently across the world, but one habit most households rejoice in during the festive season is baking.

Mary Berry’s Malteser chocolate cake is proving the perfect addition to baking repertoires, inspiring both sweet-toothed fans and home bakers to try their hand at the recipe.

The baking guru herself has dubbed it “a chocolate lover’s dream come true”, as it boasts an indulgent sponge layered with malty chocolate frosting.

The topping – and arguably the star of the show – is a blanket of whole Maltesers, which have long been a favourite confectionary in the UK.

A state on the cook’s website reads: “This cake is the perfect family treat and a real crowd-pleaser. The malt extract gives a lovely creaminess to the sponge.”

Ingredients:

30 grams (1oz) malted chocolate drink powder

30 grams (1oz) cocoa powder

225 grams (8oz) butter, softened, plus extra for greasing

225 grams (8oz) caster sugar

225 (8oz) self-raising flour

One tsp baking powder

Four eggs

For the icing:

Three tbsp malted chocolate drink powder

1 ½ tbsp hot milk

125 grams (4 ½ oz) butter, softened

250 grams (9 oz) icing sugar, plus extra for dusting

50 grams (2 oz) dark chocolate (at least 50 percent cocoa solids), melted

One tbsp boiling water

About 20 Maltesers to decorate.

Method:

  1. The recipe calls for two 20cm (8in) round sandwich tins. Grease them with butter and line the bases with parchment paper. In the meantime, preheat the oven to 180C / 160C fan /Gas 4.
  2. Measure the chocolate powder and malted chocolate drink powder in a large bowl, add two tablespoons of water, and mix to a paste. Add the remaining cake ingredients and beat until smooth.
  3. Divide evenly between the prepared tins and bake in the oven for 20-25 minutes. Set aside the tins to cool for five minutes. Turn out the cakes onto a cooling rack.  

How to make the icing:

  1. Measure the malted drink powder into a bowl and add hot milk until smooth. Add the melted butter, icing sugar and melted chocolate and mix until smooth before adding the boiling water to give the icing a shine.
  2. Place one bake on a plate and spread over half of the icing. Sandwich with the other cake and spread the training icing. Feel free to use a pipe, or create a swirled effect from the centre to the edge of the cake. Arrange the Maltesers over the top.
