Beef Burger-nion

Ingredients:
- 1 carrot
- Spoonful juice from jar of pickles
- 2 medium shallots
- 2tbsp oil
- 3 glasses red wine
- Pinch sugar
- 1 beef stock cube, crumbled
- 1tsp butter
- 1tsp plain flour
- 125g minced steak, shaped into a burger
- 1 rasher bacon
- 3 button mushrooms
- Drizzle vinegar
- 1 burger bun
- 1tbsp spiced mayonnaise
- Lettuce, to serve

- 1tbsp butter
- 1tbsp rapeseed oil
- 6 large onions, thinly sliced
- 1tbsp brown sugar
- 200ml dry white wine
- 3tbsp cognac (or an amber-coloured rum or vodka)
- 1tbsp plain flour
- 2L beef or vegetable stock
- 1 clove garlic
- 4 slices stale bread
- 100–150g hard cheese, grated (Comté or strong Cheddar work well)
