'The Pioneer Woman' Star Ree Drummond Says Her Chorizo Burgers Are 'Magical'

Food Network star Ree Drummond’s burgers made with chorizo meat are exactly what you need if you’re looking for a little extra zing the next time you grill. Here’s how to make The Pioneer Woman star’s spicy and juicy Chorizo Burgers.

Drummond’s chorizo burgers are packed with flavor

The culinary personality’s burgers call for thick-cut bacon, mayonnaise, fresh cilantro, ground chuck, chorizo, canned diced green chiles, olive oil, butter, eggs, buns, green leaf lettuce, sliced tomatoes, and hot sauce.

She serves the burgers with tater tots topped with grated Monterey Jack cheese.

“The Drummond family is so into burgers. And I love chorizo burgers because they add such amazing flavor and color, without really reinventing the wheel, …” Drummond says in the Food Network video, link below, for this recipe.

“They look magical; they just look a little more special than your average burger patty,” she said. Jokingly, the Oklahoman cattle rancher’s wife added, “I would not say that out loud at a gathering of ranchers in Osage County. It’ll be our little secret. Add a little chorizo to your burgers; you will not regret it.”

Ree Drummond’s spicy burgers come together quickly

She starts by combining the ground chuck with the chorizo, along with the chiles, salt, and pepper, dividing the meat into four “pretty generous” patties.

Drummond cooks the burgers in a skillet with oil, pressing them down while they fry: “I like to take a flat spatula and give them a good smash.” Her reason for doing this is that she wants “the burgers to be nice and thin and have a lot of surface area.”

As the burgers cook, the cooking show host gets four eggs frying with butter and oil in a separate skillet. “Yes, I am putting fried eggs on these chorizo burgers,” Drummond says, adding that the eggs will be prepared “sunny side up.” (Drummond notes that “you can flip the eggs” if you don’t like yours sunny side up.)

The burger’s sauce, in the meantime, is whipped together with the mayo, chopped cilantro, salt, and pepper and it’s slathered on the buns. Top it off with a burger, cooked bacon, one fried egg, and the lettuce and tomato.

Prepare the frozen tater tots per the package instructions and serve with grated cheese (and if desired, hot sauce) alongside the burgers.

Lastly, one reviewer surprisingly noted that the dish could use a bit more seasoning: “go heavier than you think with the kosher salt on the meat mixture, i thought the chorizo would make it salty enough but i was wrong. delicious! i don’t remember if i’ve ever eaten two burgers!”
