The former England defender, 32, has seen his minutes limited under Maurizio Sarri – playing in just three matches – and could look to move away for first-team action.
Sheffield Wednesday and Aston Villa have also shown interest lately, but Cahill has hinted he wants to stay in the Premier League.
Southampton – who take on Chelsea today – are desperate to bolster their defence, having kept just two clean sheets all season.
Cahill would represent a great, experienced addition for Mark Hughes' men – having won every domestic honour available in his distinguished career.
Southampton had been targeting Brighton star Dunk – but the centre-back penned a new deal running until at least 2023 yesterday.
Speaking about Cahill, Blues chief Sarri recently claimed: “I have spoken with him, but I think that there is October, November and December so he has to wait.
"We have to wait. I repeat, I was really very happy with the performance of Cahill against Liverpool this week.
"So, now, Gary for me is very useful. I don't know: January is far from now. We will see in October, November and December.”
Cahill may opt to leave in order to obtain first-team football – but could also be tempted to stay in order to go on a Europa League run.
