The 32-year-old admits he will consider his future in January without regular football, with Premier League clubs monitoring his situation.
Cahill has emerged as a target for Sheffield Wednesday and Aston Villa – but Sarri wants him to play the long game in West London.
The Italian boss said: “I have spoken with him, but I think that there is October, November and December so he has to wait.
"We have to wait. I repeat, I was really very happy with the performance of Cahill against Liverpool this week.
"So, now, Gary for me is very useful. I don't know: January is far from now.
"We will see in October, November and December.”
Cahill has not started a Premier League game for Chelsea this season.
He came on for 21 minutes against West Ham at the weekend for his first appearance under Sarri – but only because of an injury to Antonio Rudiger.
The German and David Luiz have become Sarri’s preferred partnership since the tactician's arrival in July – with Andreas Christensen also ahead of Cahill.
