Sometimes old favourites are the best things to bake.
Comforting and easy treats are exactly what we need as we enter the second wave of the pandemic.
This cake certainly isn’t new – it’s a classic tea loaf or the Welsh might say it’s a Bara Brith (though often that contains yeast), but whatever you call it, it’s delicious.
And this version can be whipped up with just four ingredients – dried fruit, sugar, self-raising flour and the secret ingredient, tea.
Not only does it give it a lovely flavour, but it also replaces butter and eggs, making this cake fat-free and accidentally vegan.
You do need a little bit of prep time to soak the fruit but once you’ve done that, it’s very quick.
Ingredients
- 1 cup (250mls) of strong hot tea
- 130g sultanas or mixed fruit
- 130g sugar
- 250g self raising flour
