The Prince of Wales released the recipe on his Instagram page, which he said: “can be made by using any number of our great British cheeses”. This is of his favourite brunch recipes, and Prince Charles released it for royal fans to attempt to make during lockdown.
The Clarence House post read: “British cheesemakers need our support during this time of great uncertainty, and we can all help in the simplest way.
“By sourcing British cheese from local shops and cheesemongers, and directly from producers online, you can make a vital contribution to keeping these small businesses afloat during the prevailing crisis.”

Ingredients
• 100g wilted spinach
• One cherry tomato or sundried tomatoes
• 35g of strong soft cheese
• One egg
• 80ml double cream
• 15g grated hard cheese
• Fresh basil leaves
Method
- Butter a small butter proof dish, line with wilted spinach, and make a well.
- Next, place your quartered cherry tomato on top of the spinach.
- Dot the soft cheese around the dish amongst the tomatoes and then add your torn basil leaves. Season with salt and pepper.
- Crack your egg into the centre of the spinach, then pour your double cream over the egg.
- Sprinkle on your grated hard cheese then place in the oven at 180 degrees Celsius for ten minutes.
- Once taken out of the oven, let it stand of a few minutes before eating.
When it comes to choosing different cheeses, Good Housekeeping’s Cookery Director, Meike Beck, says soft blue cheese, goats cheese and Brie are good options.
She said: “A soft blue would add a nice acidic twang to off-set the richness, a sharp goat’s cheese is a natural match for spinach.
“A soft British mould-ripened cheese like a Brie would work well too.
“Don’t be scared of sharper cheeses here as the egg yolk and cream will balance it.”
