But it makes the perfect addition to a Sunday lunch, accompanied by roast potatoes, fresh carrots and a nice hunk of meat. It is oozy, creamy and delicious, so could even make a great alternative to having a meat this Sunday lunchtime. How to make the cauliflower cheese sauce

  • 500ml milk
  • 4 tbsp flour
  • 50g butter
  • 100g strong cheddar, grated

The BBC Good Food recipe says the steps are as follows:

Put your saucepan on the heat and add 500ml milk, four tbsp flour and 50g butter.

Keep whisking fast as the butter melts and the mixture comes to the boil.

The flour will disappear and the sauce will begin to thicken.

Whisk for two minutes while the sauce bubbles and becomes nice and thick.

Turn off the heat, stir in most of the 100g grated cheddar cheese

Once you’ve finished the sauce, pour over your pre cooked cauliflower florets (boiled for five minutes) in an oven proof dish.

Scatter over the remaining cheese on the top, and add breadcrumbs if desired.

Heat oven to 220C/200C/gas 7 and when ready, add your dish. Bake for 20 minutes until bubbling.

Then serve alongside your roast beef, spuds and a yorkshire pudding for a sumptuous sunday lunch.

Can you put toppings on your cauliflower cheese?

Toppings are a great addition to the classic dish.

You can grate cheese over the top of it before you bake in the oven, which should give an extra cheesy addition.

Or add cheese then shove it under the grill, for more gooey goodness.

Another great choice for toppings is breadcrumbs, giving you a delicious crunch to your cauliflower cheese.

As the cauliflower cooks, it breaks down and releases the water in it.

In turn, this can make your sauce — no matter how thick you made it — become watery.

Can you freeze cauliflower cheese?

Yes, you can – either in individual portions or as whole dish.

If you’re freezing a full portion, prepare the cauliflower cheese right up until the point where you’re about to put it in the oven.

Leave on the side to cool, then cover and freeze.

To eat it, defrost your dish in the refrigerator then bake in the oven at 200C/400F for 20 to 25 minutes.
