The 26-year-old had planned to return to his job as a stationery manager after he left the Love Island villa, but having won the show alongside Dani, his plans have changed.
Jack admitted he and Dani, 21, had been inundated with offers since returning home from Majorca where the show is filmed.
Speaking at the Edinburgh TV festival at a Love Island masterclass alongside the show's narrator Iain Stirling, Dani said Jack had originally talked about returning to his day job "in a week" but her boyfriend then confirmed he had changed his mind.
He said: "Pens will always have a special place in my part but I haven't been back since, my desk is empty.
"I will stay in touch with the boys though.”
While the couple wouldn't confirm what their TV plans were, they teased: "We have had so many lovely opportunities."
In the meantime, Jack has been earning thousands of pounds from personal appearances at nightclubs around the country.
And he admitted it was easy money, saying: "You just pretty much go to the nightclub and you take some photos and you go home, I would like to say there is more to it, but there is not.”
The lovebirds looked smart at the event, with Dani wearing a white spot wrap dress and cream high heels, while Jack wore a white zip neck polo shirt and jeans.
They were joined by last year's winner Kem Cetinay and his BFF Chris Hughes, with both men bringing their own style to proceedings.
Kem, 22, wore a leaf print shirt and chinos while Chris, 25, opted for checked trousers and a crisp white shirt.
Iain, who chaired the session, wore dark blue jeans and a checked shirt as he posed for pictures with the Islanders.
