Moscow Mule Cupcakes

You won’t believe how easy these cupcakes are to make.

  • 1 box vanilla cake mix
  • 1 12-oz. can ginger beer
  • 1 c. (2 sticks) unsalted butter, softened
  • 4 c. powdered sugar
  • 1/4 c. vodka
  • 2 tbsp. lime juice
  • 1 tbsp. lime zest
  • lime slices, for garnish
  • Fresh mint, for garnish


  1. Preheat oven to 350 and line a muffin tin with cupcake liners.
  2. In a large bowl, combine cake mix, ginger beer, and ground ginger. Whisk until fully combined and pour into cupcake liners. Bake according to package directions and let cool completely before frosting.
  3. Make buttercream: In a large bowl using a hand mixer, beat the butter until fluffy. Add powdered sugar and beat until combined, then add vodka, lime juice and zest and beat again until combined. Pipe onto cupcakes and garnish with a wedge of lime and a sprig of mint.
