Drop Everything Because the Raindrop Cake Is Back and This Time It’s Purple

Last year, the internet lost it over the simple-yet-beautiful Raindrop Cake when it made its debut in New York City. The cake — which originated in Japan where it’s called mizu shingen mochi or water cake — is made with water and agar, a jelly made from algae. True to its name, it looks just like a raindrop.

The dessert was all over social media last when creator Darren Wong began serving it at Smorgasburg in Brooklyn and eventually Los Angeles.

It’ll be back again starting April 1, only this time it’s gotten a colorful upgrade that will give you major unicorn vibes.

It’s purple! The Instagram-friendly confection is now being made with Ube — pronounced oo-bae — a bright purple sweet potato that’s popular in a lot of desserts you’ve seen on social media lately, from ice cream to unicorn shakes.
